Veggie Enchiladas:
Don't tell the kids that there is veggies with the beans! Here is a good way to get some carrots into the picky eaters. This is loaded with veg, there is even a little spinach inside. shhhhh they will never know.
Ingredients:
1 1/2 c water
1 onion chopped
1 carrot grated
2 C. fresh spinach chopped
5 cloves of garlic chopped tiny
1 lg zucchini or 2 small chopped into small bits
2c. Monterrey Jack cheese
1 (6 oz) can of black olives chopped
1 (16 oz) can of re-fried black beans
1 lb of ground turkey
15 tortillas
1 (16oz) can of enchilada sauce
1 pk of taco seasoning
1. In a large skillet add the olive oil and saute the onions until translucent, Add in the garlic, carrot and the zucchini. Let this cook down. Add in the spinach.
2. In another pan add in the turkey and brown it. When that is done add it to the Veg mix.Add the water and the taco seasoning and let is simmer until the the sauce becomes thicker,
3. Heat beans in a sauce pan and your tortillas over a open flame. Spread the beans on the tortilla then put the veggie mix in the middle and wrap it up. Place them in a casserole dish. Repeat until you are have the dish full.
4. Pour enchilada sauce over the casserole and sprinkle the cheese on top with the olives
5. Put it in the oven on broil until the cheese melts and turns a golden brown in spots.
